How to Sous Vide New York Strip Steak?


Ingredients Needed

  • New York Strip Steaks
  • Sea Salt
  • Cracked Black Pepper
  • Avocado Oil

  • Preheat the water bath according to the temperatures mentioned above.
  • Some of the fat on the New York Strip is rendered by the slightly higher temperature of 135F.
  • Sea salt, cracked black pepper, and any aromatics should be liberally seasoned with the strip.
  • The NY Strip steak can be vacuum-sealed or placed in a heavy-duty bag using the water displacement method.
  • If the steak is extra thick, place it in a water bath and cook it for a couple of hours.
  • Now the New York strip steak can be removed and dried with paper towels.
  • Add a high smoke point oil to the cast iron pan before it goes to high heat.
  • Sear steak on a hot cast iron pan for 1 minute, flipping every 15 seconds.
  • Adding butter and aromatics to the pan will make the steak taste better. Sear for an additional 30 seconds.
  • It’s important to sear the strip on the sides too.
  • If you’re feeling adventurous you can use a kitchen torch for this.
  • Before serving, use a spoon to top the New York Strip with the leftover juices and butter from the pan – this will help further develop the crust and add flavor.
