  • 1 tablespoon salt
  • 1 tablespoon olive oil
  • Juice of 2 whole limes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Steps to Follow

  • If you want to get the best results, preheat the water bath to 131F degrees for rare to medium-rare.
  • It is recommended to cook 134-140F degrees for medium and 145F degrees for medium-well.
  • The picanha needs to be rubbed with olive oil and salt.
  • If you want to remove all the air, place it in a bag and use a vacuum sealer.
  • 6 hours is the time it will take to cook in the water bath.
  • Remove and place in an ice bath for a few minutes to stop the cooking.
  • Place a cast-iron skillet, griddle, or grill in the middle of the room.
  • Place the picanha on the fat side down and sear for 1-2 minutes until the fat is rendered.
  • If you want to cook another 45-60 seconds, flip and cook it again.
  • Remove the slice and serve it with the lime juice sauce or the lime juice mixture.

Making Lime Juice Dipping Sauce

  • Juice of 2 whole limes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

How to Reheat Picanha?

The picanha steak can be reheated in the microwave, but be careful to not overcook it. For 20 seconds at a time, microwaves can be used.

If you heat a water bath to 130 degrees, you can place the steak in a freezer bag and cook it for about 10 minutes.

I don’t like reheated meat in the microwave and this is the best way to do it.
