Sous Vide vs. Poaching: What’s The Difference?
Poaching is a method of cooking using the poaching pan to heat the liquid in the pan. Poached food is cooked by placing it directly on top of the poaching pan after the liquid in the poaching pan has been heated.
In contrast, sous vide is a French term meaning “under vacuum” or “under vacuum”. Sous vide cooking is a type of cooking that uses an electric immersion circulator (an electric heating element inside a vessel of water) to heat the contents of the cooking vessel below 100C.
This process does not require the contents of the cooking vessel to be on the same level as the water in the poaching pan, but it is often used for steaming foods, as well as poaching and braising.
How to Sear Meat after Sous Vide?
We like to sear my meat after sous vide cooking. You can usually use a cast iron pan (we like to use my cast-iron skillet for sear meat).
Do not heat the oil too high. The searing process is about 30 seconds to 1 minute.
To sear meat, simply pat dry the meat and season it with salt and pepper. Then sear the meat over medium-high heat (the meat will start to sizzle).
Once the meat is seared, remove the meat from the pan and let it rest for a few minutes. Then put it back into the same pan and put it back on the heat.
If you want to serve the meat right away, you don’t need to worry about reheating the meat. But if you are going to cook it another time, you can reheat the meat.

What Is the Best Cut of Steak for Sous Vide?
Well, there are a number of different steaks you can try but the best one is probably rib eye. The reason is that a rib eye has the most marbling which makes it taste the best.
Can You Sous Vide Multiple Steaks at Once?

A single machine can handle 4-5 steaks, but it is recommended to have two machines side-by-side for best results.
